Vegan Ginger 'Pork' Rice Bowl

Serves 2

Ingredients

  • 1 box of CHi Ground Pork
  • 2-3 tbsp ginger
  • 2/3 cup yellow onion
  • 4 cloves garlic
  • 1 tbsp coconut sugar
  • 2 tbsp rice cooking wine
  • 3 tbsp tamari
  • 2 tbsp sesame oil
  • 1 cup white basmati rice
  • Salt and pepper to taste

Garnish:

  • Cilantro 
  • Carrots
  • Sesame seeds
  • Red pepper flakes

Step 1 Add the chopped onion, minced garlic, and ginger to a pan with a splash of oil on medium heat. Let them cook for about 5 minutes and then add in the package of CHi ground pork. After 4 minutes, add 1-2 tbsp of sesame oil.

Step 2 In a small bowl, add the sugar, rice cooking wine, and tamari and mix.

Step 3 Add the sauce to the pan and cook the CHi for another 2 minutes. You can taste test here and adjust the flavor as you wish. Add in a little more ginger if you would like!

Step 4 Cook rice according to package instructions.

Step 5 Once everything is ready assemble your bowl and garnish with cilantro, thinly sliced carrots, sesame seeds, red pepper flakes, and another splash of sesame oil.
