Keto Stir Fry with Vegan Plant-Based Pork

 

Plant-based, low-carb, and keto? Yes, yes, yes! This deliciously dank stir-fry is everything you need for a satiating meal. Great to meal prep too!

Serves 2

Stir Fry Ingredients:

  • 1 package CHi Original Plant-Based Pork
  • 1 tbsp. avocado oil 
  • 2  heads broccoli crowns, washed and florets cut off
  • 1 red bell pepper, diced
  • 1 yellow squash, diced
  • 1 medium zucchini, diced
  • 1/4 cup raw cashews, chopped
  • 1/4 cup green onion, diced

Teriyaki Sauce Ingredients:

  • 1/4 cup light tamari
  • 1 tbsp. water
  • 4 tbsp. keto maple syrup or monk fruit syrup
  • 1 tbsp. minced garlic 
  • 1/2 tsp. sirarcha
  • 1 tsp. sesame seeds

Step 1 In a small mixing bowl add teriyaki ingredients and whisk until combined, set aside.

Step 2 Preheat a large skillet on medium-high heat, add chi original pork and cook according to the package.

Step 3 Add avocado oil to the skillet and add broccoli, peppers, squash, and zucchini. Cook for 2 minutes stirring occasionally. Cover with a lid to steam for 2 minutes until vegetables are bright and crisp. Add in Chi original pork and chopped cashews. Mix until well combined.

Step 4 Pour in the sauce and simmer for 2 minutes. Top with green onion and ENJOY!
