CHi-Rizo Burrito

There's nothing that hits the spot like a really good burrito. And luckily for you, we've got a really good burrito recipe to share! It has everything you want in a burrito — veggies, beans, and rice — plus our CHi-Rizo plant-based pork that's full of flavor and umami to take this recipe to the next level. The best part? This super simple yet super satiating recipe can be made in just 10 minutes! 

Ready in 10 minutes

Serves 4

Ingredients:

  • 1 package Chi-Rizo
  • 4 large burrito tortillas
  • 1 can black beans, drained and rinsed
  • 1/2 cup diced white onion 
  • 1 red bell pepper, diced
  • 1 cup jasmine rice, cooked
  • 2 tbsp. taco seasoning 
  • 1/3 cup water
  • 2 Avocados, smashed 
  • Cilantro, chopped 

STEP 1 Preheat a large skillet on medium-high heat, add defrosted CHi-Rizo, and cook for 3-4 minutes. Place CHi-rizo in a bowl and return the skillet back to heat.

STEP 2 Lightly spray with oil, add diced onions and cook for 2 minutes (until onions start to sweat). Add red pepper, black beans, and rice, and cook for additional 2 minutes. 

STEP 3 Sprinkle in taco seasoning and add water. Stir until mixed well. Add in CHi-Rizo and mix until well combined. 

STEP 4 Remove from heat. Lay out the tortilla and add smashed avocado to each burrito in the center, distributing evenly. Add 1 cup of CHi-rizo mixture on top of the avocado and sprinkle with cilantro. Roll burrito style and add back to the skillet browning on each side for 1 minute. Enjoy!

*Tip: These are great for meal prep. Simply omit the avocado and add it when ready to eat! They're also freezer-friendly so you can keep a stash to make mealtimes manageable!
